Crispy Codfish Cubes

1 onion
2 beaten eggs
4 tablespoons of oil
3 tablespoons of vinegar
1 bay leaf
1 pinch of nutmeg
1 pinch of freshly ground pepper
flour to pass
breadcrumbs to pass

Let the codfish loins defrost at room temperature, then rinse them in cold water, remove the bones, cut them into small cubes, removing the bones and put them in a bowl.
Add the olive oil, the vinegar, the peeled and grated onion, the bay leaf cut into small pieces, season with a pinch of pepper and nutmeg, mix and leave to marinate for 20 minutes.
Then drain the codfish cubes, coat them with flour, beaten eggs and finally breadcrumbs and fry them in oil until golden brown. Remove them, let them drain and serve them decorated to taste.

You can serve the Crispy Codfish Cubes on small wooden skewers, as you see in the photo, and decorate with fried parsley and olives.
