Cucumbers stuffed with Codfish

Ingredients

2 Traditional Riberalves Codfish Steaks
Olive oil to taste
1 clove garlic
2 cucumbers
6 mini sweet peppers in assorted colours
1/2 small red onion
1 cup watercress leaves
Vinegar to taste
Salt to taste
Black pepper to taste

Preparation

Thaw the codfish steaks, rinse them under cold running water, dry them well with kitchen paper and sauté in olive oil with the clove of crushed garlic for 3 to 4 minutes on each side. Remove the skin and bones, and shred.

Use a carrot peeler to partially peel the cucumbers. Cut them into quarters to make four little “cups” from each cucumber and scoop out the seeds with a dessertspoon.

Dice the peppers and chop the onion and chives. Mix everything together in a salad bowl with the watercress leaves and the codfish flakes, and season with olive oil, vinegar, salt and pepper. Stir well to combine and then fill the “cucumber cups” with the mixture.

Serve your cucumbers stuffed with codfish and pepper salad immediately or well-chilled!
