Delicious codfish with vegetables

Ingredients

500 g of deep-frozen shredded codfish Riberalves
400 g of straw fries
2 carrots
1 large leek
1 large onion
8 dl of milk
80 g of flour
40 g of margarine
0.5 dl of oil
Fresh oregano q.s.
Nutmeg q.s.
Red peppercorn q.s.
Salt and pepper q.s.
breadcrumbs for sprinkling

Preparation

Shall we prepare a delicious Codfish with vegetables? An incredible recipe with an explosion of flavours.

Defrost the codfish, drain it and set it aside. Clean the leek, cut it into slices, wash them very well and drain them. Peel and wash the carrots and onion, grate the carrots and finely chop the onion.

Heat the olive oil in a pan, add the onion and fry until it becomes transparent. Then add the leek and the carrots and fry a little longer until everything is golden brown. Then add the shredded codfish, season with a little pepper, let it cook, stirring occasionally, until the codfish gains colour, remove from the heat and set aside.

Boil the milk. In a pan on the heat, melt the margarine, add the flour little by little, stirring constantly until it turns brownish and then add the hot milk, little by little, stirring constantly until it thickens and becomes lump-free. Remove from the heat, blend with a hand blender if there are any lumps, season with nutmeg and stir well.

Add the potato sticks to the pot of codfish, stir, add the sauce you have prepared, adjust the salt and stir again. Pour into metal rings or individual dishware containers, sprinkle with breadcrumbs and bake in a preheated oven at 200ºC until golden brown. Remove from the oven and serve sprinkled with chopped fresh oregano and crushed red peppercorns.
