3 medium ripe tomatoes
2 red onions
1 garlic clove
1 sweet potato
1 red pepper
1 orange pepper
1/2 sprig of coriander
2 bay leaves
Extra virgin olive oil
50-100 ml beer
Pink salt and black pepper to taste

Layer the olive oil, onion slices, potato slices, pepper slices, garlic slivers, bay leaves and codfish steaks in a pan. Repeat the process, layering the ingredients in the same order.
Finally, add a drop of beer and sprinkle with coriander. Cover the pan and cook on low heat for approximately 35 minutes. Sprinkle with chopped fresh coriander. Your Codfish Stew is ready to serve!
