Green Codfish lasagne

1 onion, chopped
1 leek, sliced
700 ml white (bechamel) sauce
150 g spinach leaves
250 g green pasta sheets
50g Azores cheese, grated
Sea salt to taste
Black pepper to taste
Nutmeg to taste
TO PREPARE THE SALAD:
400 g mixed tomatoes, diced
1 cucumber, diced
Oregano to taste
Fleur de sel to taste
White wine vinegar to taste
Green Codfish lasagne. With Riberalves Codfish, of course! Take a peek and make it at home.
Add the Riberalves codfish steaks to a pan with plenty of water. Bring to the boil, cover the pan and simmer for approximately 5 minutes. Allow the codfish to cool down and flake it.
Add the olive oil, onion and leek to a separate pan and cook until tender and golden.
Stir in the codfish. Add the spinach and season with salt, black pepper and nutmeg. Stir and cook until the spinach wilts.
Stir in 500 ml of white sauce and bring to the boil.
Grease a baking tray with olive oil. Place a layer of pasta on the bottom, cover with half of the codfish mixture and top with a new layer of pasta. Add the remaining codfish mixture and a final layer of pasta. Top with the remaining white sauce and sprinkle with Azores cheese and chives.
Bake at 180°C for 20 minutes.
To prepare the salad, mix all ingredients and place in the fridge for 20 minutes.
Your Green Codfish Lasagne is ready to serve!
