Baby roasting potatoes
Onion

Extra Virgin Olive Oil

How about a recipe for Lagareiro-style Codfish (which means in the style of the olive-presser) prepared by nutritionist Mariana Abecasis? Here’s the full recipe.
Cut the onion and paprika pepper into thin slices. Chop the garlic cloves too and put them into an ovenproof dish.
Arrange the Riberalves codfish loins and the baby potatoes on top and drizzle with olive oil and chopped fresh coriander to taste. Bake in the oven, pre-heated to 220 ºC, for about 15-20 minutes, until the codfish is tender and golden brown.
(If you wish, you can parboil the potatoes ahead of time so that they take less time in the oven).
NUTRITION TIP
When you cook lagareiro-style codfish, it actually cooks in the olive oil. However, when it’s ready to serve, you must be sure to drain off the excess olive oil so that the dish will not be too heavy and too high in calories!
