Kiki’s Codfish



200 g Riberalves Ready-to-Cook Shredded Codfish
1 tablespoon olive oil
1/2 onion, chopped
1 clove garlic, chopped
1/2 teaspoon paprika
Chopped parsley to taste
1/2 courgette
1 carrot
1 medium-sized potato
1 teaspoon dried herbs to taste
1 tablespoon spelt flour


Thaw the cod.

Preheat the oven to 180 ºC.

Put the olive oil, onion and paprika into a pot. Put the pot on the heat and, as soon as the onion becomes translucent, add the garlic and the codfish. Leave to cook and add the chopped parsley before turning the cooker off. Reserve.

Peel the potato and the carrot and grate them. Wash the courgette well and grate it with the skin on. Add the dried herbs and flour to the mixture.

Divide the mixture into ramekins: first a layer of the grated vegetable mixture, then the codfish, and then another layer of grated vegetables.

Bake in the oven for about 30 minutes.
