Light Codfish Lasagne

Ingredients

250 g deep-frozen soaked codfish Riberalves
4 very large courgettes
2 leeks
250 g of mushrooms
1 kg of ripe tomato
4 cloves of garlic
4 tablespoons of olive oil
1 tablespoon of butter
1 tablespoon of flour
1 tablespoon chopped chives
salt, q. B.
1 lemon
Grated Parmesan cheese

Preparation

Shall we prepare a light Codfish Lasagne? A simple, practical and tasty recipe. Riberalves Codfish, Ready to taste good!

Cut the courgettes in longitudinal slices. Choose the biggest slices, let them rest in salt for half an hour. Dry them and grill them. When toasted, remove and set aside.

Sautéed the mushrooms in butter and a little salt until cooked. Drain them well. Separately, do the same with the leek until soft. Boil the codfish and break it into flakes and leave it to rest in a few drops of lemon juice.

Sauté the peeled tomatoes in olive oil and garlic, put in a blender and reduce to a cream (you can add a spoonful of flour). When ready, chop a good dose of chives and incorporate.

In an oven tray, put more olive oil, a layer of grilled courgettes, mushrooms, the shredded codfish, a layer of tomato sauce, another layer of courgettes, another of leeks, codfish and more sauce. Sprinkle the Light Codfish Lasagne with parmesan cheese and bake in a strong oven until golden brown.
