Monteiro Style Codfish

Ingredients

800 g deep-frozen soaked cod loins Riberalves
800 g of medium potatoes
2 onions
3 cloves of garlic
1.5 dl of olive oil
2 tablespoons of vinegar
1 teaspoon of sweet pepper
Olives q.s.
parsley q.b.
Salt and pepper q.b.
flour to pass

Preparation

If you’re looking for a tasty recipe for a nice family meal check out the Monteiro Style Codfish and bon appétit.

Defrost the codfish loins, then dry them with kitchen paper and season them with freshly ground pepper. Wash the potatoes and boil them with the skin on in water seasoned with salt. Meanwhile, peel and wash the onions and garlic cloves and chop them.

Heat the olive oil in a frying pan on the heat. Cover the codfish loins in flour, add them to the frying pan and fry until golden brown on both sides. Remove and set aside the codfish, add the onion, garlic and paprika to the same pan with the frying oil and fry, stirring occasionally, until the onion is soft. Add the vinegar, stir, bring to the boil, remove from the heat and adjust the seasoning.

Drain the boiled potatoes, remove their skins and cut them into thick slices. Arrange the codfish loins on a platter, add the boiled potatoes around them, cover with the onion mixture, decorate the Monteiro Style Codfish with olives and parsley sprigs and serve.
