2 Riberalves codfish loins (550 g)
200 g couscous
200 ml water
3 cloves garlic
2 bay leaves
Olive oil to taste
Seed mixture to taste
Salt and oregano to taste
Cherry tomatoes for garnish to taste

Lemon sauce:
500 ml milk
50 g flour
50 g butter
Zest of 1 lemon

Put the RIBERALVES codfish loins into an ovenproof dish along with the peeled and finely-chopped garlic cloves. Add the bay leaves and cover with olive oil.

Bake in the oven, preheated to 150 ºC, for 30 minutes. Remove and set aside. Put the water into a saucepan and bring to the boil. Add salt, oregano and the couscous. Remove and let stand for 10 minutes.

Prepare the sauce: put the milk, flour, butter and lemon zest into a pan, stir well, and heat, stirring constantly, until thickened. Remove and set aside.

Stir the couscous well, add the seeds and mix them in. Serve your codfish loins with the couscous. Garnish with cherry tomatoes and serve with the lemon sauce.
