Ingredients
Olive oil to taste
3 oranges
2 lemons
8 lettuce leaves
8 dates
2 cups spinach leaves
Lemon juice
Fleur de sel to taste

Thaw the codfish loins, rinse them under cold running water and dry them well with kitchen paper. Grease the codfish loins with olive oil and put them in an ovenproof dish, skin side down.
Thinly slice 1 orange and 1 lemon, cut the slices into halves and arrange on and around the fish. Drizzle with olive oil and bake in a preheated oven at 180 °C for about 20 minutes.
Cut the lettuce leaves into julienne strips, cut 2 oranges into segments, chop the dates and mix everything with the spinach leaves in a salad bowl. Season with olive oil, lemon juice and fleur de sel.
Serve the baked codfish loins with the fresh salad.
