Oven-baked Couscous with Codfish, by Ana Bravo

Ingredients

1 Riberalves Ready-to-Cook Codfish Loin
1 onion
2 cloves garlic
1 carrot
1/3 courgette
Pinch of nutmeg
Chilli pepper to taste
Bay leaf to taste
1 tablespoon olive oil
1 cup couscous

Preparation

Thaw the codfish, remove the skin and bones, and flake.
Put the olive oil in a pan with the sliced onion, chopped garlic, chilli pepper and bay leaf to taste.
As soon as the onion softens, add the cod, nutmeg, carrot and courgette (cut to your liking).
Cook for a few minutes.
Preheat the oven to 180 ºC.
Stir the couscous into the codfish mixture, remove the bay leaf, and transfer to an ovenproof dish. Add hot water (double the amount as compared to the couscous) and bake in the oven for about 30 minutes (until all the liquid evaporates).
Serve your Oven-baked couscous with codfish immediately.
