Polenta with codfish

Ingredients
1 onion, chopped
2 cloves garlic, chopped
2 tomatoes, chopped and seeds removed
1 green bell pepper, chopped
Olive oil to taste
Chopped chives to taste
1 litre of the codfish cooking water
250 g cornmeal
200 g Parmesan cheese
Preparation
Let’s prepare a delicious polenta with codfish. Here’s the recipe!
Remove the still-frozen loins from the packet, cover with water in a pot and bring to the boil. When the water starts boiling, set the timer for 10 minutes. When the time is up, immediately remove the fish from the water and set both it and the cooking water aside.
Mix the onion, garlic, tomato and bell pepper together. Tip them into an ovenproof dish drizzled with olive oil. Season with salt and pepper. Bake in the oven for 20 minutes. Remove from the oven and add the codfish, drizzle with more olive oil and sprinkle with some more salt and pepper. Bake in the oven for another 10 minutes.
Dissolve the cornmeal in one cup of the codfish cooking water and mix well. Heat the remaining cooking water and, when it boils, add the cornmeal mixture and cook for 10 minutes.
Turn off the heat and add the grated Parmesan.
When it’s time to eat, plate the polenta and top with the chopped vegetables and the codfish loins. Drizzle with olive oil and sprinkle with chives.
