Oven-baked ratatouille with codfish – A tasty recipe.

Ingredients

2 Riberalves Codfish Loins
2 large onions
2 cloves garlic
3 tomatoes
Salt and black pepper to taste
Basil to taste
Thyme to taste
1 large aubergine
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
1 large courgette

Preparation

Today’s recipe suggestion is oven-baked ratatouille with codfish. It’s easy to make. Shall we try it?

Thaw the codfish loins, remove the bones from the middle and sides and dry them with kitchen paper.

Soften the finely-chopped onion and garlic in olive oil. Peel and finely chop the tomatoes and add them to the pan. Season with salt, black pepper and basil and thyme leaves, and cook for 10 to 15 minutes until creamy. Pour the sauce into an ovenproof dish.

Cut the remaining vegetables into slices, approximately 0.5 cm thick. Make piles of alternating slices (aubergine, peppers, courgette and onion) and stand them in the dish. Season with salt and black pepper, drizzle with olive oil and bake in a preheated oven at 180 °C for 40 minutes.

Put the codfish into another ovenproof dish, drizzle with olive oil, sprinkle with basil and thyme leaves, and put it into the oven halfway through the ratatouille cooking time (to cook for approximately 20 minutes). Serve your oven-baked ratatouille and codfish immediately.
