Riberalves Codfish Cakes
Ingredients
1kg of potato
200gr of onion
1 yolk
1 whole egg
20gr of finely chopped parsley
Salt q.s.
Pepper q.s.
Preparation
What about preparing delicious Riberalves Codfish Cakes?
Boil the codfish submerged in water for 10 minutes, from cold to hot. Remove the codfish and reserve the cooking water.
As soon as the water cools down, place the washed potatoes in their shells and cook over low heat for about 15 to 20 minutes.
During this process, shred the codfish as much as possible, remove the potatoes from the pan and allow to cool, chop the onion and parsley well, peel the potatoes and with the help of a food mill turn them into a puree.
Add the codfish and mix very well until a homogeneous dough is formed, then add the eggs, onion and parsley and adjust the seasoning to taste.
Leave for an hour outside to dry out the dough a little, then you can start making the cakes with the help of two spoons and finally fry at 180 degrees until crispy and golden.
