Riberalves Codfish Pie

Ingredients
500 g potatoes
200 g frozen peas
1/2 lemon
1 tbsp. unsalted butter
1 carrot
1 onion
Olive oil
500 ml milk
40 g flour
50 g frozen spinach
40 g grated Parmesan
Sea salt to taste
Black pepper to taste
Preparation

Pre-heat the oven at 180°C.
Peel and cut the potatoes into big chunks. Add a pinch of salt to boiling water and cook the potatoes until soft. Add the peas and cook for a further 2 minutes. Drain and mash the pea and potato mixture with a fork. Season with a pinch of sea salt, black pepper, lemon zest and butter. Set to the side.
Peel and chop the carrot and onion. Fry gently in an oven pan.
In the meantime, bring the milk to the boil, add the codfish and cook for 3 minutes. Remove the codfish with a spatula and set to the side.
Mix the flour with the carrot and onion. Gradually pour in the warm milk, one ladle at a time, whisking continuously until smooth. Allow for the spinach to defrost and stir in. Season.
Season the codfish with lemon juice and nutmeg. Stir in the cheese.
Top the codfish mixture with the mash and draw a pattern, using a tablespoon or spatula.
Bake for 30 minutes or until golden. Your Riberalves Codfish Pie is ready!
