Rice with codfish tongues
Olive oil q.s.
1 large onion
2 garlic cloves
1 big ripe tomato
1 red pepper
200 g of carolino rice
300 ml of water
Salt and black pepper q.s.

Defrost the codfish Tongues, rinse them under cold running water and set aside. Soften the finely chopped onion and garlic in olive oil.
Then add the finely chopped tomatoes (peeled) and cook for 2 to 3 min. Then add the diced peppers and cook for 1 to 2 min. Meanwhile, add the codfish Tongues and cook for 6 to 7 min. Then, remove the codfish Tongues and set aside.
Add the rice to the pan, stir for 1 min. and add the hot water. Check the salt and freshly ground black pepper seasoning and cook until the rice is done, stirring from time to time.
Just before the rice is cooked, add again the codfish Tongues to the pan and finish cooking.
Serve hot with plenty of chopped coriander. A delicious codfish tongue rice is ready!
