Olive oil to taste
1 onion
1 clove garlic
1 large ripe tomato
150 g turnip greens
400 g carolino rice
Salt to taste
Black pepper to taste
1 bay leaf
Preparation
We’re going to make a balanced and nutrient-rich meal of Rice with codfish, turnip greens and tomatoes. Give the recipe a try and enjoy!
Thaw the codfish, rinse under cold running water, and drain.
Soften the chopped onion and garlic in olive oil. Then add the chopped tomatoes (peeled) and cook for 3 minutes. Add the greens and cook for another 4 minutes. Add the rice and cook for another 2 minutes, stirring. Season with a pinch of salt and black pepper, add the bay leaf and 1 litre of hot water, and stir. Finally, when it comes to a boil, add the shredded codfish, stir, cover, and cook over low to medium heat for 12 to 15 minutes.
Serve hot.
