Stuffed codfish

Ingredients

4 large (cleaned) deep-frozen soaked cod fillets Riberalves
1 l of milk
200 g of ham
300 g of beef chorizo
2 onions
4 cloves of garlic
2 bay leaves
1 bunch of parsley
1/2 kg of ripe tomatoes
Olive oil
Salt and pepper
1/2 l of «béchamel» sauce
Freshly grated Parmesan cheese

Preparation

Boil the codfish loins in milk for a few minutes. While they are still raw, remove them and put them in the freezer. When they are stiff, cut them in two (like a sandwich) with a large, sharp knife. Set aside.

Sauté the chopped garlic and onion in olive oil, add the bay leaves and the bunch of parsley. Add the ham and the chorizo, finely chopped, plus the peeled and seedless tomato. Cook for 15 minutes and remove from the heat. Remove the bay leaf and the bunch of parsley. Adjust the seasoning.

Stuff the loins with the preparation and place them in an oven dish. Cover with the béchamel sauce, sprinkle with grated parmesan cheese and bake in the oven until golden brown.

Serve the Stuffed codfish with potato sticks.
