Ingredients
2 red chilli peppers
100 g shiitake mushrooms
1 tablespoon ginger, chopped
1 clove garlic, chopped
1 clove garlic, crushed
1 bay leaf
½ red bell pepper, chopped
1 dessertspoon brown sugar
2 tablespoons soy sauce
1 dessertspoon rice vinegar
70 ml water
Sesame oil to taste
½ dessertspoon corn starch
Black pepper to taste
1 bok choy or ¼ Chinese cabbage
Olive oil to taste

Start by cooking the bok choy in boiling water.
Fill a small pot to ¾ full with olive oil and add the crushed garlic clove and the bay leaf. Put the thawed codfish loin into the pot and cook at low temperature for about 30 minutes.
Put some sesame oil into a wok and quickly stir fry the ginger, garlic, chilli peppers and red bell pepper. Add the shiitake mushrooms and cook for 3 minutes.
Put the soy sauce, brown sugar, rice vinegar, corn starch and water into a bowl. Mix well.
Add the mixture to the wok and cook for about 5 minutes, until the sauce has thickened slightly and coats the ingredients.
Serve the bok choy and the codfish with the sauce. Your Sweet and Sour Codfish Loin is ready.
