Ingredients

600 g deep-frozen soaked codfish Riberalves
2 medium onions finely chopped
1 l of milk
4 tablespoons olive oil (or corn oil)
1 bay leaf
250 g of mayonnaise
750 g of mashed potato (fortified with butter, milk, cream, nutmeg and salt)
2 tablespoons of breadcrumbs
2 tablespoons of Parmesan cheese
4 pitted black olives, sliced into rounds
chopped curly parsley

Preparation

Cook the codfish in milk, drain it, shred it and set aside.

Place a frying pan on the heat, add the olive oil (or corn oil), the onions and three tablespoons of the codfish cooking milk, a bay leaf, and sauté on low heat until the onion becomes transparent.

Place a base of mashed potato in a refractory dish, spread the codfish and onion on top, and cover with (good) mayonnaise. Repeat the operation and finish by sprinkling the grated cheese, breadcrumbs and olives.

Grill the Zé do Pipo Style Codfish cooked in milk in the oven on high heat and serve sprinkled with freshly chopped parsley.
