Zé do Pipo Style Codfish

Ingredients

4 Riberalves cod loins
1 kg of potato
50g of black olives
30g of parsley
3 onions
12 cloves of garlic
2 bay leaves
3 egg yolks
zest of 14 lemon
1 lt of milk
600ml of oil
oil q.b.
salt and black pepper q.b.
vinegar q.b.

  1. Place 8 peeled garlic cloves on a sheet of silver foil with a drizzle of olive oil; bake in oven at 160°C for 30 minutes; set aside.
  2. Remove the bones from the codfish loins; place the loins in a pan with 4 sliced garlic cloves, 2 bay leaves and cover with milk; cook over medium heat for 7 minutes. Remove from the pan and shred; set the milk aside.
  3. Boil the potatoes in their skins in salted water; peel and pass them through a food mill; set aside.
  4. Place the potato in a pan, add 350ml of the codfish cooking milk and blend until you obtain a creamy puree.
  5. Cut the onion into julienne strips; in a frying pan place a drizzle of olive oil, 4 bay leaves and sauté the onion over a low heat until caramelised; set aside.
  6. Place 3 egg yolks in a bowl; using a whisk, gradually add in the oil until you obtain a mayonnaise. Season with salt, pepper, lemon zest and the pureed roasted garlic.
  7. In an oven dish place the mashed potatoes; add the onion; add the flaked cod; cover with mayonnaise and bake in the oven at 180ºC for 20 minutes or until golden brown. Finish with black olives and chopped parsley.
