Put the olive oil, onion and spices into a pot.<\/p>\n\n\n\n
Fry gently and as soon as the onion becomes translucent add the codfish and the courgette (after washing, grating and removing excess water).<\/p>\n\n\n\n
After cooking over low heat until most of the water has evaporated, sprinkle with chopped parsley and serve cold, with beet bread toast or whichever type you prefer.<\/p>\n\n\n\n
Serves two as a main meal or more as a starter or snack but either way it\u2019s the perfect healthy nibble to accompany some convivial conversation.<\/p>\n\n\n\n
