Sweet potato rolls stuffed with codfish<\/a>. Shall we prepare it?<\/p>\n\n\n\n

Defrost the codfish.<\/p>\n\n\n\n

Remove the skin and bones and shred it. <\/p>\n\n\n\n

I put the olive oil and the finely chopped onion in a pan. Bring to the boil and as soon as the onion is translucent add the chopped tomato and parsley.<\/p>\n\n\n\n

I let it cook for a few minutes, added the codfish and when it was almost ready I added the spinach.<\/p>\n\n\n\n

Leave to cook until all the liquid has evaporated. Allow to cool.<\/p>\n\n\n\n

Mix the mashed potato with a teaspoon of olive oil and the flour. (The dough should become pliable, add a little more flour if necessary).<\/p>\n\n\n\n

Divide the dough between 4 to 6 equal parts. Open them, in your hand and fill with the codfish mixture. Close and cook on both sides in a non-stick pan.<\/p>\n\n\n\n
