If you’re looking for a recipe for a nice family meal that everyone will enjoy, Codfish<\/a> Migas<\/em> is the perfect recipe for you.<\/p>\n\n\n\n

Peel the potatoes, cut them into pieces, boil them in water seasoned with salt and drain them. Also boil the codfish fillets in water with the bay leaves. Remove from the pan, let it warm, remove the skin and bones, shred them and reserve a small quantity for garnish.<\/p>\n\n\n\n

Drain the tomatoes and chop them. Peel the onions and garlic cloves and finely chop them. Heat the olive oil in a frying pan, add the onion and garlic cloves and fry until golden brown. Add the tomato and fry a little longer. Remove half of the mixture and set aside.<\/p>\n\n\n\n

Add half the codfish to the frying pan, as well as half the potatoes, rectify the salt, season with nutmeg and chilli and mix everything very well, while mashing the potatoes. Roll the mixture with the help of a spatula and remove to a plate.<\/p>\n\n\n\n

Add the remaining tomatoes, cod and potatoes to the frying pan and prepare some more breadcrumbs. Garnish with the flaked codfish which you have reserved, sprinkle with chopped parsley and serve. You can accompany the Codfish Migas with a mixed lettuce salad.<\/p>\n\n\n\n
