Bon app\u00e9tit.<\/p>\n\n\n\n<p>Let the codfish loins defrost at room temperature, then rinse them in cold water, remove the bones, cut them into small cubes, removing the bones and put them in a bowl.<\/p>\n\n\n\n<p>Add the olive oil, the vinegar, the peeled and grated onion, the bay leaf cut into small pieces, season with a pinch of pepper and nutmeg, mix and leave to marinate for 20 minutes.<\/p>\n\n\n\n<p>Then drain the codfish cubes, coat them with flour, beaten eggs and finally breadcrumbs and fry them in oil until golden brown.
