Defrost the shredded codfish. Peel and wash the onion and garlic cloves, chop them finely and place them in a pan.<\/p>\n\n\n\n

Add the olive oil, bring to the boil and simmer, stirring occasionally, until everything is soft. Add the peeled tomatoes with the sauce and cook for another 5 minutes. Remove from the heat and mash lightly with a hand blender.<\/p>\n\n\n\n

Bring to the boil again, add the bay leaf, the codfish, the coriander sprig, the white wine and a little more water if necessary, season with nutmeg, salt and chilli and cook for another 12 minutes.<\/p>\n\n\n\n

Peel and wash the potatoes, boil them in water seasoned with salt, then drain them and serve with the codfish. Garnish with more chopped coriander.<\/p>\n\n\n\n
