To start preparing a recipe of Two- textures codfish with roasted apple puree, begin by separating the Riberalves Codfish<\/a> Fillets – the loin (taller) from the flank (thinner).<\/p>\n\n\n\n

Place the separated loin in an oven-proof dish. Season with olive oil, garlic, pepper and bay leaf.<\/p>\n\n\n\n

Place in the oven at 180\u00baC ventilated and cook for no more than 10 minutes. Remove the loin from the oven and set aside.<\/p>\n\n\n\n

The thinner part, should be in the oven, directly on the grill, for about 30 to 100 min. At the end it should be extra crispy.<\/p>\n\n\n\n

Meanwhile, cut 2 apples in half, place them on a platter with the cut side facing up, season with various spices, turn the oven on to 220\u00baC and cook for about 20 min.<\/p>\n\n\n\n

Remove the apples from the oven, and in a food processor, mash everything.<\/p>\n\n\n\n

At the same time, you can put a quarter of the cabbage in the oven to roast on the grill.<\/p>\n\n\n\n

To plate it, place the apple puree as a base, the Codfish in the 2 textures on the puree, and the Roasted Cabbage on the side.<\/p>\n\n\n\n

Optionally, add some fresh herbs, coarse salt over the dish and a homemade mayonnaise over the cabbage.<\/p>\n\n\n\n
