{"id":7998,"date":"2022-01-19T10:03:09","date_gmt":"2022-01-19T10:03:09","guid":{"rendered":"https:\/\/riberalves.pt\/?post_type=receitas&#038;p=7998"},"modified":"2024-03-08T15:39:01","modified_gmt":"2024-03-08T15:39:01","slug":"roupa-velha","status":"publish","type":"receitas","link":"https:\/\/riberalves.pt\/en\/recipes\/roupa-velha\/","title":{"rendered":"\u201cRoupa Velha\u201d Saffron and Citrus Hollandaise"},"content":{"rendered":"\n<p>A traditional recipe with a chef&#8217;s touch: \u201cRoupa Velha\u201d and Saffron and Citrus Hollandaise.<\/p>\n\n\n\n<p>Shred the cod; cut the cabbage into thick julienne strips; cut the potatoes and egg into pieces. In a frying pan put a drizzle of olive oil and over a low heat cook the sliced garlic until toasted.<\/p>\n\n\n\n<p><br>Add the cabbage and potatoes and saut\u00e9 for 3 minutes; add the <a href=\"https:\/\/riberalves.pt\/en\/codfish\/\" target=\"_blank\" rel=\"noreferrer noopener\">codfish flakes<\/a> and fold into the previous preparation; add a ladle of the cooking broth and bring to the boil; adjust seasoning with salt and black pepper. Set aside.<\/p>\n\n\n\n<p>Melt butter in bain marie; add citrus zest and fillets and saffron; blend briefly with hand blender; set aside hot.<\/p>\n\n\n\n<p>In a bowl place the egg yolks and water and whisk until smooth.<\/p>\n\n\n\n<p>Place the bowl with the egg yolks in a bain marie and with a whisk stir in the butter until the sauce is mayonnaise style. Season with salt, black pepper, and lemon juice.
