To prepare a delicious Codfish with sweet potato, peel the sweet potato, cook in salted water, drain, cut into cubes and set aside.<\/p>\n\n\n\n
Boil the codfish a<\/a>nd shred it with a fork.<\/p>\n\n\n\n Dissolve a tablespoon of flour into a tablespoon of butter, add the two cups of cream and when creamy, add the shredded codfish. Stir well until it becomes a paste, season with salt and nutmeg, and refrigerate until well chilled.<\/p>\n\n\n\n Heat the remaining butter and saut\u00e9 the chopped onion until softened. Add the cleaned, peeled tomatoes and saut\u00e9. Add the sweet potato, the cups of stock, and reduce to cream in a blender.<\/p>\n\n\n\n Put it back on the heat and let the cream simmer. If you want it more liquid, add water. Adjust the seasoning.<\/p>\n\n\n\n Serve hot on a warm plate and place a scoop of the cold codfish cream in the middle.
