Today\u2019s recipe idea is Codfish and Vegetable Casserole. Shall we make it?<\/p>\n\n\n\n

Allow the codfish to defrost, rinse it under cold tap water and set to the side.<\/p>\n\n\n\n

Cook the chopped garlic and onion in olive oil until soft, add the chopped (skinless) tomato and bay leaf and cook for 2-3 minutes. Add the peeled, diced pumpkin and sweet potato, season with salt and black pepper and cook for 2-3 minutes.<\/p>\n\n\n\n

Add the wine and bring to the boil for 1-2 minutes. Add the diced pepper and (defrosted) peas. Cover the pan and cook for a further 5 minutes. Stir in the codfish<\/a> and 100 ml hot water. Cover the pan and cook on low to medium heat for 8-10 minutes.<\/p>\n\n\n\n

Sprinkle with parsley and serve immediately. Your Codfish and Vegetable Casserole is ready!<\/p>\n\n\n\n
