Scoop the sweet potato flesh (you can microwave it for 2 minutes to soften the flesh). The flesh can be used to make a sweet potato mash. <\/p>\n\n\n\n

Boil and flake the codfish. Lightly fry 1\/2 onion and 1\/2 leek in a little olive oil.  Add the codfish. Place the mixture inside the sweet potato and bake until golden. <\/p>\n\n\n\n

Serve with boiled Brussel sprouts. Sprinkle with oregano or Proven\u00e7al herbs. <\/p>\n\n\n\n
