Morue \u00e0 Gomes de S\u00e1.<\/p>\n\n\n\n<p>Tout pour dans les autres recettes de morue, les ingr\u00e9dients de base sont la morue, la pomme de terre et l&rsquo;huile d&rsquo;olive. Le plat se distingue par la d\u00e9licatesse des tron\u00e7ons de morue tr\u00e8s tendres, qui excellent lorsqu&rsquo;ils sont incorpor\u00e9s aux autres ingr\u00e9dients.<\/p>\n<\/div>\n\n\n\n<div wp-block-column-is-layout-flow\">\n<p>Le nord du Portugal (r\u00e9gion o\u00f9 les premiers bateaux de p\u00eache de morue ont commenc\u00e9 \u00e0 arriver dans le pays) s&rsquo;est toujours illustr\u00e9 comme un lieu de cr\u00e9ation de recettes de morue.<\/p>\n\n\n\n<p>Un autre exemple n\u00e9 dans la ville de Porto, aujourd&rsquo;hui un v\u00e9ritable classique, est la morue \u00e0 Z\u00e9 do Pipo.<\/p>\n\n\n\n<p>C&rsquo;est le surnom de Jos\u00e9 Valentim, auteur de la recette et propri\u00e9taire d&rsquo;un restaurant \u00e0 Porto, qui a r\u00e9alis\u00e9 le plat pour la premi\u00e8re fois en 1940 pour le pr\u00e9senter \u00e0 un concours gastronomique.<\/p>\n\n\n\n<p>Dans cette recette, la morue est accompagn\u00e9e de pur\u00e9e de pommes de terre et de mayonnaise, puis est gratin\u00e9e.<\/p>\n<\/div>\n<\/div>\n\n\n\n<h2 class=\"has-text-align-center wp-block-heading\"><strong>La morue \u00e0 Br\u00e1s<\/strong><\/h2>\n\n\n\n<div class=\"wp-block-columns are-vertically-aligned-center is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\">\n<p>Il s&rsquo;agit d&rsquo;une recette originaire de la r\u00e9gion de Lisbonne au XIXe si\u00e8cle.<\/p>\n\n\n\n<p>Son cr\u00e9ateur, nomm\u00e9 Braz, \u00e9tait le propri\u00e9taire d&rsquo;une taverne dans le quartier populaire du Bairro Alto, et il fut \u00e0 l&rsquo;origine de la combinaison de la morue d\u00e9chiquet\u00e9e, des pommes de terre frites et, \u00e0 la fin, des \u0153ufs brouill\u00e9s.<\/p>\n\n\n\n<p>Elle est devenue l&rsquo;une des recettes portugaises les plus populaires gr\u00e2ce \u00e0 cette formule simple et d\u00e9licieuse, la technique de Br\u00e1s, jusqu&rsquo;\u00e0 \u00e9voluer en un accompagnement qui a \u00e9t\u00e9 r\u00e9interpr\u00e9t\u00e9 par des chefs et des cuisiniers, dans les plats les plus class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\">\n<p>Saviez-vous que, selon la tradition, en Angleterre et en Irlande du Nord, le Fish and Chips est pr\u00e9par\u00e9 \u00e0 partir de morue?<\/p>\n\n\n\n<p>La recette consiste en une portion de poisson frit qui est roul\u00e9e dans de la panure, accompagn\u00e9e de frites. D&rsquo;origine britannique, elle regorge d&rsquo;histoires et d&rsquo;anecdotes.<\/p>\n\n\n\n<p>Populaire parmi les classes ouvri\u00e8res en Angleterre, la recette \u00e9tait consid\u00e9r\u00e9e comme bon march\u00e9 et rapide. En Irlande du Nord, la morue est le poisson favori du Fish and Chips.<\/p>\n\n\n\n<p>Enfin, mais non des moindres, il est devenu un plat tr\u00e8s populaire dans des pays comme l&rsquo;Australie, le Canada, la Nouvelle-Z\u00e9lande et m\u00eame l&rsquo;Afrique du Sud.<\/p>\n<\/div>\n<\/div>\n\n\n\n<h2 class=\"has-text-align-center wp-block-heading\"><strong>LUTEFISK \u2013 LA MORUE \u00c0 LA SOUDE CAUSTIQUE<\/strong><\/h2>\n\n\n\n<div class=\"wp-block-columns are-vertically-aligned-center is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\">\n<p>G\u00e9n\u00e9ralement produite en Norv\u00e8ge, la morue Lutefisk est r\u00e9hydrat\u00e9e dans une solution de soude caustique, dans une esp\u00e8ce de saumure \u00e0 la soude caustique, accompagn\u00e9e d&rsquo;hydroxyde de sodium pendant quelques jours.<\/p>\n\n\n\n<p>Elle subit ensuite un processus de nettoyage, est bouillie \u00e0 la vapeur jusqu&rsquo;\u00e0 ce qu&rsquo;elle s\u00e8che et est servie avec une sauce qui peut \u00eatre au beurre, accompagn\u00e9e d&rsquo;un verre de bi\u00e8re.<\/p>\n\n\n\n<p>En raison de l&rsquo;absence de grands d\u00e9p\u00f4ts de sel, la soude caustique a \u00e9t\u00e9 une solution rapide pour la conservation du poisson en Norv\u00e8ge.<\/p>\n\n\n\n<p>Consomm\u00e9 \u00e9galement en Finlande, au Danemark, en Su\u00e8de et m\u00eame aux \u00c9tats-Unis, le Lutefisk est un plat traditionnel de No\u00ebl. En raison des je\u00fbnes religieux, \u00e0 l&rsquo;image de ce qui se passe au Portugal, le poisson est devenu au fil des si\u00e8cles le repas id\u00e9al pour ces jours de f\u00eate.<\/p>\n\n\n\n<p>\u00ab\u00a0Les habitants des pays nordiques mangent surtout du poisson s\u00e9ch\u00e9, comme le brochet, la perche, la br\u00e8me, la lotte\u2026 Pour la pr\u00e9paration de cette recette, ces poissons sont immerg\u00e9s dans de la soude caustique forte pendant deux jours. Ils sont ensuite rinc\u00e9s et tremp\u00e9s dans de l&rsquo;eau claire et douce pour qu&rsquo;ils redeviennent aussi souples que n\u00e9cessaire. On y ajoute du beurre sal\u00e9 et ils sont ensuite bouillis. Ce plat peut m\u00eame servi sur les tables des princes et il est consid\u00e9r\u00e9 comme un plat savoureux et d\u00e9licieux\u00a0\u00bb, explique Olaus Magnus, historien.
