{"id":11590,"date":"2023-10-23T10:22:24","date_gmt":"2023-10-23T09:22:24","guid":{"rendered":"https:\/\/riberalves.pt\/?post_type=receitas&#038;p=11590"},"modified":"2023-11-09T15:22:40","modified_gmt":"2023-11-09T15:22:40","slug":"longes-de-morue-confits-au-poivre-rose-risotto-au-vin-mousseux-safran-et-citron-vert","status":"publish","type":"receitas","link":"https:\/\/riberalves.pt\/fr\/recettes\/longes-de-morue-confits-au-poivre-rose-risotto-au-vin-mousseux-safran-et-citron-vert\/","title":{"rendered":"Longes de morue confits au poivre rose, risotto au vin mousseux, safran et citron vert"},"content":{"rendered":"\n<p>D\u00e9congeler les longes de morue, les rincer \u00e0 l\u2019eau froide courante, bien les s\u00e9cher sur du papier absorbant, les mettre dans une cocotte et les couvrir d\u2019huile d\u2019olive, ajouter les grains de poivre rose, la gousse d\u2019ail \u00e9cras\u00e9e et la feuille de laurier, puis faire cuire sans bouillir, mais \u00e0 petits bouillons, jusqu\u2019\u00e0 ce que les lamelles de la chair de morue s\u2019ouvrent, soit environ 20 minutes (utiliser ensuite cette huile d\u2019olive pour assaisonner des p\u00e2tes ou des salades, ou pour pr\u00e9parer des plats de poisson&#8230;).<\/p>\n\n\n\n<p>Chauffer 1 cuill\u00e8re \u00e0 soupe d\u2019huile d\u2019olive et 1 cuill\u00e8re \u00e0 soupe de beurre et y faire fondre l\u2019\u00e9chalote finement hach\u00e9e. Ajouter le riz et le safran et faire cuire pendant 2 \u00e0 3 minutes \u00e0 feu moyen \u00e0 fort, en remuant. Arroser avec le vin mousseux et laisser bouillir 1 minute. Ajouter ensuite l\u2019eau chaude ou le bouillon de l\u00e9gumes jusqu\u2019\u00e0 ce que le riz soit juste recouvert, salez et poivrez, puis cuire \u00e0 feu doux, en remuant, jusqu\u2019\u00e0 ce que le liquide soit \u00e9vapor\u00e9. Couvrir de nouveau avec de l\u2019eau ou du bouillon de l\u00e9gumes et laisser cuire, en remuant, jusqu\u2019\u00e0 ce que le liquide soit totalement absorb\u00e9.
