Dans une po\u00eale, versez un filet d&rsquo;huile d&rsquo;olive et faites revenir l&rsquo;ail \u00e9minc\u00e9 \u00e0 feu doux jusqu&rsquo;\u00e0 ce qu&rsquo;il soit dor\u00e9.<\/p>\n\n\n\n<p><br>Ajoutez le chou et les pommes de terre et faites-les sauter pendant 3 minutes et les morceaux de morue et incorporez-les \u00e0 la pr\u00e9paration pr\u00e9c\u00e9dente ; <\/p>\n\n\n\n<p>ajoutez une louche du bouillon de cuisson de la morue et portez \u00e0 \u00e9bullition ; rectifiez l&rsquo;assaisonnement. R\u00e9server.<br>Faire fondre le beurre au bain-marie ; ajouter les zestes d&rsquo;agrumes et les brins de safran ; broyer bri\u00e8vement au mixeur. R\u00e9server au chaud.<\/p>\n\n\n\n<p><br>Dans un bol, placez les jaunes d&rsquo;\u0153ufs et l&rsquo;eau et fouettez jusqu&rsquo;\u00e0 ce que le m\u00e9lange soit lisse.<br>Placez le bol avec les <a href=\"https:\/\/riberalves.pt\/fr\/la-morue\/\" target=\"_blank\" rel=\"noreferrer noopener\">jaunes <\/a>d&rsquo;\u0153ufs dans un bain-marie et, \u00e0 l&rsquo;aide d&rsquo;un fouet, incorporez le beurre jusqu&rsquo;\u00e0 ce que la sauce ressemble \u00e0 une mayonnaise. Assaisonnez avec du sel, du poivre noir et du jus de citron.
