8 shrimps
1 red pepper
2-3 slices of pineapple
Preparation
Codfish Skewers are perfect for a quick and healthy meal! Shall we try them?
Defrost the codfish loins, discard the skin and bones. Then cut into cubes and place in a bowl.
Peel and finely chop the garlic cloves. Add to the bowl, also add the olive oil and a little chilli. Mix well and set aside.
Cut the pepper in half, remove seeds and membranes and cut into cubes. Also cut the chorizo into slices. Peel the pineapple, remove the stone and cut into cubes.
Prepare the skewers, interspersing the codfish with the pepper, pineapple, chorizo and cherry tomatoes. Place in a preheated oven at 180ºC, until golden brown. Sprinkle with chopped coriander and serve.
