Codfish Frittata

Ingredients
2 eggs
2 tablespoons of natural yogurt
q.s. oregano (or other herb to taste)
1 tablespoon of olive oil
1 clove of garlic
1/2 onion
1 chopped tomato
1 cup of peas
1 tablespoon chopped red pepper
Preparation
Start preparing the Codfish Frittata by defrosting the loins, remove the skin and bones and cut into cubes.
Put the olive oil, garlic and onion in a pan. When the onion has softened, add the tomato and after a few minutes the codfish. Leave to cook over a low heat until most of the liquid has evaporated and when it is almost ready, add the peas.
Transfer to a tray. Programme the oven at 180 degrees. Beat the eggs with the yoghurt, season with oregano to taste and pour the mixture over the codfish.
I sprinkled the red pepper on top and put it in the oven for about 20 minutes (or until cooked).
