Codfish in the pressure cooker

1.5 kg deep-frozen soaked codfish Riberalves
1 green pepper cut into strips
1 red pepper cut into strips
2 large sliced onions
2 minced garlic cloves
2 ripe tomatoes (skinless, seeded, diced)
1 bunch of chopped parsley
Salt and pepper
800 g peeled potatoes (in 1 cm slices)
Olive oil
100 g pitted black olives

Clean the codfish and cut into pieces. Make a mixture of peppers, onion, tomato, parsley and garlic. Season with salt and pepper.

In a pressure cooker, pour olive oil and alternate layers in the following order: mixture, codfish, potato, mixture, codfish, potato until the ingredients end.

Pour in half a cup of olive oil, place over a high heat and, when it starts to whistle, lower the heat and count 15 minutes. Let the steam escape, open and adjust the seasoning.

Place the mixture in the oven on a serving dish, you can ­put olives on top, drizzle with more olive oil and leave in the oven until the potatoes are toasted.

Serve with white rice or green salad.
