Zé do Pipo Style Codfish

Ingredients

600 g deep-frozen soaked cod loins Riberalves
600 g of potatoes
2 large onions
2 garlic cloves
4 tablespoons of olive oil
1 dl of milk
6 tablespoons of mayonnaise
Olives q.s.
Morrones peppers q.b.
chopped parsley q.b.
Nutmeg q.s.
Salt and pepper q.b.
flour to pass

Turn the oven on to 200 ºC. Defrost the codfish loins, dry them with a kitchen cloth and season them with pepper. Set aside.

Peel and wash the onions, garlic cloves and potatoes. Cut the onions into half-moons, the potatoes in half and chop the garlic. Bring a pan of water and salt to the boil, add the potatoes and cook them. Then remove from the water, discard the skins and mash. Add the milk and nutmeg and adjust the seasoning. Stir well and set aside.

Heat the olive oil in a frying pan, coat the codfish loins in flour and fry them on both sides. Then drain them and place them in an oven dish.

Sauté the onion and garlic cloves in olive oil and place them on top of the codfish. Pour the puree into a pastry bag and arrange it around, drizzle with the mayonnaise and bake in the oven until golden brown. Remove from the oven and serve with the peppers and olives. Sprinkle with chopped parsley and serve the Zé do Pipo Style Codfish.
