Codfish confit with sautéed vegetables

Ingredients
Olive oil and butter to taste
1 head of garlic
1 bay leaf
1 small onion
2 large sweet potatoes
2 Starking or Royal Gala apples
3 celery sticks
1 star anise pod
1 cinnamon stick
Salt and black pepper to taste

Allow the codfish steaks to defrost and dry using kitchen paper. Place the fish in a large pan and cover with olive oil (you can keep the olive oil to use in stir-fries or prepare dressings). Peel the outer skin and cut the head of garlic in half. Add the garlic and bay leaf to the pan and simmer on low heat for approximately 25 minutes.
Chop the onion and peel the sweet potatoes. Cut the sweet potatoes and apples into small cubes and slice the celery into half-moon shapes.
Heat 3 tablespoons of olive oil and 1 tablespoon of butter and cook the onion until tender. Add the sweet potato cubes and cook for 6-7 minutes. Then add the celery and cook for a further 2-3 minutes. Finally, add the apple, star anise and cinnamon stick. Season with salt and black pepper, drizzle with olive oil, stir, cover the pan and cook for a further 5 minutes.
Serve the codfish confit with the sautéed vegetables and mashed spinach with olive oil and garlic. Bon appétit!
