Codfish Cheeks cooked in foil

Ingredients

1 sheet of parchment paper
150g ready-to-cook cod cheeks Riberalves
black pepper to taste
1 c. extra virgin olive oil soup
1/4 courgette
1/2 carrot
1/2 leek (white part)
2-3 cherry tomatoes

Prepare the vegetables and cut them in the way you prefer (into slices, flakes or strips).

Take to the frying pan and cook them in a drizzle of olive oil, seasoning with a little black pepper and thyme.

Place a bed of the prepared vegetables on the greaseproof paper and top with the codfish cheeks. Season, close the foil and bake in a preheated oven at 180°C for about 7-10 minutes.

Remove the Codfish Cheeks cooked in foil from the oven and it is ready to serve.
