Codfish Farofa with Sautéed Kale – A quick and easy recipe to make.
Ingredients
Olive oil to taste
2 cloves garlic
150 g bacon
75 g butter
1 small onion
300 g cassava flour
Salt to taste
Black pepper to taste
500 g kale
Preparation

Thaw the shredded codfish, rinse under cold running water, drain very well, and sauté for 5 to 7 minutes in olive oil along with a clove of chopped garlic.
Cut the bacon into small cubes and fry in a large frying pan with high sides until crispy. Put the fried bacon into a bowl. Now add the butter and 1 tablespoon of olive oil to the fat still in the pan where you cooked the bacon. Turn the heat on low to melt the butter and gently soften the finely-chopped onion. Then add the cassava flour, season with salt and black pepper, and cook until golden and crispy, stirring constantly.
Add the sautéed codfish and bacon to the farofa (sautéed cassava flour) and mix it all together.
Sauté the kale in olive oil with 1 clove of minced garlic, seasoning with salt. Mix 100 g of the sautéed kale with the farofa.
Serve the codfish farofa with the remaining sautéed kale.
