Preparation
A healthy recipe that comes to us from nutritionist Lillian Barros. This Codfish Loin with Apple and Blueberries was created for everyone who can’t imagine life without delicious codfish dishes! Here’s the full recipe.
Put some water in a pot to boil. When it starts boiling, add the still-frozen codfish loin. Cook for 10 minutes. Remove the codfish loin from the pot, leave it to cool, and then remove the bones and shred it into flakes.
Put a dash of olive oil into a frying pan and brown the onion with a clove of chopped garlic. Add a little Worcestershire sauce, salt and pepper to taste. Leave to cook. Add the blueberries and stir.
Next, add the apple slices and stir lightly.
To prepare the quinoa, simply boil ½ a cup of quinoa in double the water (1 cup) for about 10 to 15 minutes. When it’s cooked and while still warm, stir in about a tablespoon of goji berries and let it sit.
Serve your Codfish Loin with Apple and Blueberries however you like!
It’s ready to serve!
