Two-textures codfish with roasted apple puree with spices and roasted cabbage

Ingredients

1 Riberalves cod fillet, soaked
3 Gran Smith Apples
spices
Cabbage heart
1 head of garlic
100ml of Olive Oil
Q.B. of Salt
pepper

Preparation

To start preparing a recipe of Two- textures codfish with roasted apple puree, begin by separating the Riberalves Codfish Fillets – the loin (taller) from the flank (thinner).

Place the separated loin in an oven-proof dish. Season with olive oil, garlic, pepper and bay leaf.

Place in the oven at 180ºC ventilated and cook for no more than 10 minutes. Remove the loin from the oven and set aside.

The thinner part, should be in the oven, directly on the grill, for about 30 to 100 min. At the end it should be extra crispy.

Meanwhile, cut 2 apples in half, place them on a platter with the cut side facing up, season with various spices, turn the oven on to 220ºC and cook for about 20 min.

Remove the apples from the oven, and in a food processor, mash everything.

At the same time, you can put a quarter of the cabbage in the oven to roast on the grill.

To plate it, place the apple puree as a base, the Codfish in the 2 textures on the puree, and the Roasted Cabbage on the side.

Optionally, add some fresh herbs, coarse salt over the dish and a homemade mayonnaise over the cabbage.
