Codfish Ravioli

Ingredients

350 g of flour
50 g of oil
1.5 dl of well-measured water
1 pinch of salt
flour to sprinkle


FOR THE FILLING:

500 g of deep-frozen shredded codfish Riberalves
1 onion
2 garlic cloves
4 dl of milk
0.5 dl of oil
40 g of cornflour
Parsley q.s.
Nutmeg q.s.
Salt and pepper q.s.

Preparation

Make the filling:

Defrost the shredded codfish. Heat the olive oil in a pan, add the onion and the chopped garlic and fry until golden brown. Add the codfish, season with pepper and cook well, stirring occasionally.

Remove from the heat, crumble slightly and return to the heat. Dissolve the cornflour in the milk, add to the pan, add a little chopped parsley, season with nutmeg, mix well, remove from the heat and leave to cool.

The dough: put the flour in a bowl, add a pinch of salt, the olive oil and the water and knead well until it becomes a smooth homogeneous dough. Then roll out the dough, sprinkling it with flour underneath.

Put the filling in a pastry bag and arrange it in small portions on top of half the dough. Brush all around with water, fold the dough over to cover and press around the filling.

Cut up the ravioli with a pasta cutter and then cook them in salted water. Drain them and serve with tomato sauce and decorated to taste.

Expert suggestion:

Make a homemade tomato sauce: chop 1 onion and 2 garlic cloves, pour into a pan, add 2 tablespoons of olive oil, 1 sprig of basil and 1 large tin of peeled tomatoes and season with salt and pepper. Bring to the boil and cook until soft, adding a little water if necessary. Remove from the heat and puree with a hand blender. The Riberalves Codfish Ravioli recipe is ready!
