Codfish with chestnuts, by Ana Bravo

Ingredients

180 g Riberalves Ready-to-Cook Codfish Loins
6 frozen chestnuts (use more if you want to!)
1/2 cup Brussels sprouts
1/2 cup cherry tomatoes
1/2 onion
1 clove garlic
1 tablespoon olive oil
1 teaspoon paprika
olives to taste (to serve)

Preparation

Today’s suggestion from our nutritionist Ana Bravo is Codfish with chestnuts. Try the recipe below and prepare a healthy and delicious meal!

Boil the chestnuts and Brussels sprouts, drain, and set aside.

Preheat the oven to 180 ºC.
Cut the onion into half-moons, slice the garlic, and put them into an ovenproof dish. Place the codfish, chestnuts, Brussels sprouts and tomatoes on top. Sprinkle the codfish with the paprika. Add the olive oil just before you put the dish in the oven to bake for about 25 minutes (or until the codfish and tomatoes are cooked).

Serve with some olives and more cherry tomatoes.
