180 g Riberalves shredded codfish
6 tablespoons cooked quinoa
Chopped mint to taste
1 tablespoon olive oil
1/2 onion, chopped
1 clove garlic, chopped
1 tablespoon red bell pepper, chopped
1 carrot, grated
1 slice of low-fat cheese, grated

Preheat the oven to 190 ºC.
Put the olive oil, onion, garlic and bell pepper in a pan on the heat and, as soon as the onion becomes translucent, add the codfish and the carrot.
Cook for a few minutes over low heat and then transfer to a bowl. After cooling slightly, stir in the quinoa, mint and grated cheese.
Divide the mixture into 2 ramekins and bake until toasted on top (about 15 minutes).
Serve your codfish with mint warm.
