Codfish with nuts

Nothing like a codfish with nuts, accompanied by olive oil and good company. Right? Check out the full recipe here.

Ingredients

800 g deep-frozen soaked cod loins Riberalves
800 g of potatoes
100 g mixed nuts (sultanas, chopped walnuts, chopped almonds, pine nuts)
1 large onion
3 cloves of garlic
1.5 dl of white wine
1 dl of olive oil
1 tablespoon of vinegar
1 pinch of sweet pepper
Coriander q.s.
Salt and pepper q.b.

Preparation

Defrost the codfish loins and place them on a tray. Peel and wash the onion and garlic cloves, cut the onion into thin half-moons, chop the garlic and place in a bowl. Add the olive oil, vinegar and paprika and season with pepper.

Drizzle over the codfish and place in a preheated oven at 180 ºC for about 35 minutes until the codfish is baked. In the middle of the roasting, drizzle with white wine.

Meanwhile, peel and wash the potatoes, boil them in water seasoned with salt and drain them. Remove the codfish from the oven, arrange on a platter, sprinkle with the nuts  and serve with the potatoes. Sprinkle with chopped coriander.

Expert suggestion:

You can bake the potatoes in less time, drain them, add them to the codfish tray and let them bake the last 10 minutes. Your codfish with nuts is ready!
