Codfish with Risotto

Shall we prepare a Codfish with Risotto? A simple and very tasty recipe and with the best protein, the Riberalves codfish, Enjoy!

Ingredients

1 kg of cod loins soaked frozen Gourmet Riberalves
500 g of rice for risotto
2 leeks
1 large onion
50 g of margarine
2 dl of white wine
2 tablespoons of cream cheese
1 bay leaf
Chives q.s.
Nutmeg q.s.
Salt and pepper q.s.

Preparation

Shall we prepare Codfish with Risotto? A simple and very tasty recipe and with the best protein, the Riberalves codfish, Ready to Taste Good!

Defrost the codfish loins and cook them in water seasoned with a pinch of salt, nutmeg and the bay leaf.

Drain the codfish, remove the skins and bones, flake it and set it aside. Strain 1.2 litres of the cooking broth through a sieve and reserve it too.

Peel and wash the onion and chop finely. Clean the leeks, cut them into slices, wash them and drain them.

Heat the margarine in a pan, add the onion and fry until golden brown. Add the leek and the rice, stir and let it sauté very well.

next the white wine, stir, bring to the boil and cook, gradually adding the reserved broth and stirring occasionally, until the rice is cooked and creamy.

Finally, the codfish and the cream cheese, adjust the seasoning, remove from the heat and serve sprinkled with chopped chives.
