Ingredients

800 g Riberalves Ready-to-Cook Codfish
350 g straw potatoes
2 carrots
2 leeks
1 onion
800 ml milk
100 ml tomato pulp
50 ml olive oil
3 tablespoons flour
1 tablespoon butter
Nutmeg to taste
Aromatic herbs to taste
Grated cheese to taste

Preparation

Today’s recipe is for a delicious Creamy codfish with vegetables. Let’s be bold in the kitchen today and make this delicious meal with the best Portuguese cured codfish! Here’s how to make it. First, thaw the codfish and cook it in the milk. When it’s cooked, remove it from the milk, let it cool and remove the skin and bones.

Heat the butter in a pot, add the flour and stir until the mixture turns brownish. Add to the milk, blend, and bring to a boil, stirring constantly until thickened. Remove from heat and season with salt, pepper and nutmeg. Reserve.

Peel and wash the onion and garlic cloves; cut the onion into half-moons and chop the garlic cloves. Peel and wash the carrots, grate them and reserve. Wash the leeks, cut off the roots and trim any spoiled parts of the leaves, then cut them into thin julienne strips.

Heat the olive oil in a pot and add the onion, the garlic cloves, the carrots and the leeks. Season with a little salt and sauté until the vegetables wilt.

Remove from the heat and place in a bowl along with the codfish, the sauce, the tomato pulp and the straw potatoes. Mix it all together and then tip the mixture into a serving dish. Sprinkle with herbs and grated cheese. Decorate your Creamy codfish with vegetables to your liking and serve.
